Pearse Piggott is accused of being involved in a plot to pass off eggs from caged hens as organic or free range over an almost four-year period.
It is alleged Piggott had been dealing with Keith Owen of Heart of England Eggs, based in Bromsgrove.
Piggott is facing two charges over the scam - conspiracy to defraud and perverting the course of justice.
Piggott, who won an All-Ireland championship medal with the renowned Galway hurling team in the 1980s, had faced a third charge - false accounting - but the High Court in Dublin heard that British authorities had withdrawn it.
Mr Justice Peart said he had taken account of the fact that the businessman was aware of the consequences.
