Dear Editor, the only thing I can say with confidence about the Birmingham baltis I devour with relish in Birmingham, is that they are mouth wateringly delicious.

I am confused though as to their origin. They are, according to some, a Birmingham culinary invention.

The winner of Bimingham’s first “official” balti competition, (which you reported) was constructed using a 100-year-old Bangladeshi recipe so it’s not a Birmingham invention, or is it?
