Sardines in Goan Cafreal
Ingredients
12 Large sardines
1 large lemon sliced
For the Kafrial marinade:
Handful mint leaf
Handful coriander
½ tsp green chilli paste
1 clove of garlic
½ grated ginger
Pinch of salt
½ tsp of chaat masala
Juice of ½ lime
2 tbsp Greek yoghurt
2 tbsp olive oil
Method
1. Blitz oil, mint, coriander, green chilli, chaat masala and lime juice into a smooth paste.
2. Mix in with yoghurt, add more yoghurt if this is too strong and adjust seasoning to taste.
3. Spoon the paste into the cavity of the sardines.
4. Pre-heat your oven to 180°C.
5. Place the lemon slices onto a non-stick roasting tray and rest the sardines on top.
6. Roast in the pre-heated oven for 8 to 10 minutes.
7. Simply serve as they come and enjoy with friends.
